EASY Vegan Peanut Butter Rice Krispy Treats
Easy to make classic rice crispy treats with a healthy and tasty twist
Servings: 24 bars
Ingredients
- 6 cups rice krispy cereal
- 2/3 cup natural peanut butter warmed to soften
- 2/3 cup honey warmed to melt
- 1 cup vegan chocolate chips optional
- 2 tbsp coconut oil optional
Instructions
- In a large mixing bowl, combine rice krispy cereal, peanut butter, and honey. Press firmly into parchment-lined 9×13 casserole dish. (To make it easier to press firmly, cover with parchment paper or silpat. Press firmly all over with hands or large cup.)
- Melt chocolate and coconut oil together on stovetop or in microwave. Spread evenly over dessert.
- Refrigerate bars until cool and firm. Topping is optional but will help bars hold together better and it's delicious!
