So easy to make and kid friendly, these rice crispy treats are sure to be a hit. Chocolate topping is optional, but really… is it though?

EASY Vegan Peanut Butter Rice Krispy Treats

Ingredients

  • 6 cups rice krispy cereal
  • 2/3 cup natural peanut butter warmed to soften
  • 2/3 cup honey warmed to melt
  • 1 cup vegan chocolate chips optional
  • 2 tbsp coconut oil optional

Instructions

  • In a large mixing bowl, combine rice krispy cereal, peanut butter, and honey. Press firmly into parchment-lined 9×13 casserole dish. (To make it easier to press firmly, cover with parchment paper or silpat. Press firmly all over with hands or large cup.)
  • Melt chocolate and coconut oil together on stovetop or in microwave. Spread evenly over dessert.
  • Refrigerate bars until cool and firm. Topping is optional but will help bars hold together better and it's delicious!
