I just can’t stop eating these, breakfast lunch or supper. All the goodness and comfort of fried potatoes without all the extra fat and sodium. Easy to make, easy to eat! These potatoes are tasty for breakfast, lunch, or supper but I especially enjoy them in breakfast burritos.
Easy Vegan Fried Potatoes
A classic breakfast favorite with a healthy twist.
Ingredients
- 3 pounds potatoes
- 1 onion chopped
- 1 tsp garlic powder
- 1 tsp salt
- 2 tsp parsley optional
- 1 tsp smoked paprika optional
- 2 tbsp olive oil optional
Instructions
- Bring a medium sized pot of water to a boil on the stove, enough to cover the potatoes when cubed.
- Peel or scrub potatoes and cube large.
- Place in boiling water and boil until fork tender, 5-10 minutes.
- Drain and transer potatoes to frying pan.
- Over medium heat, fry potatoes and diced onion in frying pan using small amounts of water to prevent sticking. Add olive oil at this point if using or spritz with cooking spray.
- Add in garlic powder, salt, parsley, and smoked paprika.
- Cook until potatoes begin to brown, stirring often.
