Vegan chicken salad is an easy and delicious dish. It’s perfect for picnics, school lunches, or a tasty party appetizer. It’s easy to make ahead or keep as a leftover.
I love that this vegan chicken salad doesn’t use traditional veggie meat that’s full of chemicals and additives, but instead uses this very simple vegan shredded chicken you can make at home.
How to make it
To make this delicious vegan chicken salad, simply make one recipe of my easy one-ingredient vegan shredded chicken.
Next, you’ll need to finely shred the seitan chicken in the food processor. Once it’s shredded, mix in all of the toppings: vegan mayonnaise, dill relish, onions, celery, and spices.
Substitutions
For this recipe you can easily sub the shredded chicken 1:1 for crumbled tofu and make a delicious egg salad spread! Add a touch of turmeric for color.
If looking for a lower-fat alternative, choose a tofu-based or oil-free homemade mayonnaise alternative.
How to store it
Store this spread in an airtight container in the refrigerator up to one week.
I have not tried freezing this recipe. However, I would not recommend it as it would ruin the texture of the celery and probably greatly change the texture of the vegan mayo.
How to use it
Use this vegan chicken salad to make a delicious sandwich perfect for a school lunch or a picnic. Pair it with your favorite crackers for a tasty party appetizer.
Serve it up in a small, chic serving dish and serve it on a savory charcuterie board. Or add a scoop to your favorite salad or pasta salad. So many options!
Vegan Chicken Salad
Equipment
- 1 Food Processor
Ingredients
- 2 cups vegan shredded chicken see post for link to recipe, finely shred in food processor
- 1 cup dill pickle relish or finely diced dill pickles
- 2 cups celery, finely diced or pulverized in food processor
- 1/4 cup sweet or red onion, finely diced or pulverized in food processor
- 3/4 cup vegan mayonnaise of choice I typically use Hellmann's–delicious but not low fat!
- 2 tsp vegan chicken seasoning if not available, salt to taste
- 2 tsp onion powder
- 1 tsp dill weed
- salt to taste
Instructions
- Finely shred vegan shredded chicken in food processor. Transfer to a large mixing bowl.
- Mix in relish, celery, onion, mayonnaise, and seasonings. Mix until thoroughly combined.
- Serve as a sandwich spread, a cracker dip, on a salad, or with a charcuterie board.
