This tasty strawberry walnut salad is one of my go-to recipes when I want a healthy meal that is easy to prepare, yet satisfying. The combination of sweet and tangy flavors from the strawberries and oranges, the crunch from the walnuts, and the creaminess of the avocado make this salad a delicious and nutritious explosion of flavors.
How to make it
To make this salad, you will need the following ingredients:
- Mixed greens
- Strawberries
- Oranges
- Cucumbers
- Avocado
- Walnuts
- Sweetener of choice
- Berry vinaigrette (you can use a store-bought one or follow my recipe to make your own)
To prepare the salad, follow these simple steps:
- Wash and dry the mixed greens, and place them in a large bowl.
- Wash the strawberries, remove the stems, and slice them.
- Peel the oranges, remove the white pith, and slice them into rounds or smaller pieces.
- Peel the cucumbers, and slice them into rounds.
- Cut the avocado in half, remove the pit, and cube it.
- Add the sliced strawberries, oranges, cucumbers, and avocado to the bowl with the mixed greens.
- Sprinkle the roasted walnuts (see recipe) over the salad.
- Drizzle the berry vinaigrette over the salad, and toss gently to coat.
How to store it
If you have any leftover salad, you can store it in an airtight container in the refrigerator for up to 5 days. However, keep in mind that the avocado may brown over time, so it is best to add it just before serving.
Variations
This salad is also very customizable, and you can add or remove ingredients according to your preferences. Add in vegan feta, pecans, or almonds, or other fruits like blueberries, raspberries, or sliced peaches.
Make this meal ahead to batch-prep for the week and you can have a delicious, nutritious salad ready to go at a moment’s notice.

Strawberry Walnut Salad
Ingredients
- 4 cups fresh mixed greens I love to buy the pre-washed type
- 1 cup sliced fresh strawberries, stems removed
- 1 avocado, cut into small cubes
- 1 cup cucumber, cut into rounds or quarters
- 1 orange peeled & sliced, then quartered into small segments
Roasted Walnuts
- 1 cup coarsely chopped walnuts
- 1 tbsp water
- 1-2 tbsp sweetener of choice such as maple syrup, coconut sugar, or brown sugar maple syrup is my favorite
- pinch of salt
berry vinaigrette
- 3/4 cup mixed berry juice concentrate I use Old Orchard available at many grocery stores
- 1 tbsp cornstarch
- 1/2 cup water
- 1 tbsp lemon juice
- 3 tbsp sweetener of choice such as maple syrup, coconut sugar, or Florida crystals
Instructions
- Place the fresh mixed green in a shallow serving bowl. Carefully arrange fruit, avocado, and cucumbers on top.
- For roasted walnuts, mix together coarsely chopped walnuts with sweetener, water, and salt. Place on a lined or greased cookie sheet and bake at 400 for 8 minutes stirring once halfway through. Remove from oven and allow to cool. They will become crispy as they cool.
- For the dressing, bring berry juice concentrate to a boil over medium heat. In a small bowl, thoroughly mix together cornstarch and water. Slowly pour cornstarch slurry into juice concentrate on the stove while stirring constantly. Continue to stir until dressing thickens, about 3-5 minutes.
- Turn off heat. Mix in lemon juice, sweetener, and salt.
- Drizzle over the strawberry walnut salad and store any leftovers in an airtight container in the refrigerator.
