Why I Love This Dish
Oil-free Mexican three bean salad is a versatile dish that everyone loves. Last Christmas we had a big gingerbread making party at our house, and I chose this dish as one of my appetizers for the party. It’s fresh and it’s fast, and it’s sure to please a crowd.
This bean salad is a staple recipe you’ll often run in to because people love it. However, most Mexican three-bean salad recipes are loaded with oil and sugar. However, this recipe has no oil and only a tiny bit of sugar. And I promise you won’t miss it for a second!
This dish is bursting with bright flavors and packed with protein for a winning combination both your body and your taste buds will love.
Ingredients
For this dish you will need:
- Garbanzo beans
- Kidney beans
- Black beans
- Sweet corn
- Red onion or sweet onion if you prefer!
- Fresh garlic
- Bell pepper, whatever color you prefer
- Avocado
- Cilantro
- Lime juice (from a fresh lime if you have it!)
- Seasonings
Variations
You can easily make this salad with any other type of canned beans such as pintos, cannelini beans, or great northern beans.
Add in a spicy pepper such as jalapeno or cayenne pepper if that’s your thing! Personally I love it but my kids don’t. And the kids are always right, right?
Storage
Store this salad in an airtight container in the refrigerator for up to a week.
Serving tips
This salad is wonderful as a stand-alone salad, but it also makes a great party appetizer. Serve it with your favorite corn chip scoops for a delicious, fresh, and nutritious dip.
What goes well with this dish
Serve this dish at a party with other appetizers such as pasta salad, shishkabobs, vegan pigs in a blanket, or bruschetta. Or serve this dish as a side salad for your favorite tacos or burritos.
Oil-Free Mexican Three Bean Salad
Ingredients
- 1 can garbanzo beans, rinsed & drained
- 1 can kidney beans, rinsed & drained
- 1 can black beans, rinsed & drained
- 1 cup sweet corn
- 1 cup bell pepper, finely diced any color
- 1 avocado diced
- 1/2 cup red onion, finely diced
- 1/4 cup cilantro, finely sliced
- 2 tbsp lime juice fresh if available, can sub lemon juice
- 1 clove garlic, crushed
- 1/2 tsp sweetener of choice
- 1/2 tsp oregano
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/4 tsp salt adjust to taste
Instructions
- Combine all together in a large mixing bowl and serve with a side of your favorite corn chips for dipping!
