This easy recipe makes any normal breakfast feel decadent.
First, cube your bread. Any bread will work. I like to use homemade whole wheat bread for both the nutrition and flavor. Sourdough bread has amazing flavor.
Secondly, combine all cream ingredients in the blender and blend on high.
Pour the cream over the bread cubes in a large mixing bowl and stir. Pour into a greased casserole dish and bake.
Delicious topped with a dusting of powdered sugar, a drizzle of maple syrup, or a tiny bit of whipped cream. Strawberries pair well with this, too.

If you’re not familiar with date sugar, it’s arguably the healthiest sugar on the market. Date sugar is simply roasted and crushed dates, making it a truly “whole food” sweetener. While it’s more of an investment than traditional sugar, I feel that it is well worth the spend for us. One thing to keep in mind is that date sugar does not dissolve in liquid, so it is not suitable for all baking needs. However I love that this particular brand’s sugar is extremely finely powdered, making it unlikely you will notice that it doesn’t dissolve. Oil Free French Toast Casserole
Ingredients
- 1 loaf whole wheat bread or bread of choice
- 1 package Mori-Nu silken tofu, drained any firmness
- 1 13.5 ounce can coconut milk full fat, 170 calories or more
- 1/3 cup date sugar, coconut sugar, or brown sugar date sugar if WFPB
- 2 tbsp cornstarch
- 3 tbsp ground flaxseed
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp salt
Instructions
- Preheat oven to 350F.
- Cube bread into half-inch cubes and place in a large mixing bowl.
- Add into a blender all the remaining ingredients (not the bread).
- Blend on high until smooth, approximately one minute.
- Using a rubber spatula or blender spatula, transfer blender contents to mixing bowl with bread cubes. Stir to evenly coat bread cubes.
- Transfer mixture to a greased 9×13 casserole dish.
- Bake 35-45 minutes according to preference or until beginning to turn golden on top.
- Top with powdered sugar, strawberries, or maple syrup as desired.
