Place frozen veggies in sauce pan over medium heat. Add 1-2 cups of water, enough to coat bottom of the pan. Cook veggies until beginning to soften but not "well done." Drain any excess water.
In a small saucepan, bring six cups of water to a boil. When boiling, shut off heat and add noodles. Let noodles sit until soft, two minutes or more. Drain water. Add noodles to vegetable mixture.
Chop Chai Pow Yu as desired. Add to pancit.
Add in seasonings and stir to incorporate. Cook an additional 1-2 minutes over medium heat. Add salt to taste.
